The Yellow Fish (or Yellow Croaker) is a seasonal delicacy. The naturally sweet fish is lightly cured, before being confit in seasoned olive oil at 52 degrees Celsius. It is accompanied by finely sliced green rhubarb and a three-mustard sauce of Karachi, Dijon, and Pommery. To finish are some bright pickled shimeji mushrooms and mustard seeds, and a rich fish broth reduction.
 
黄鱼(或黄花鱼)是一种季节性的美味鱼鲜,其肉质带有天然的甜度,我们将其轻轻腌渍,随后在52度的温度下与调味橄榄油一起煨制,佐以擦成薄丝的绿大黄,以及Karachi、Dijon和Pommery三种混合芥末酱呈现。最后,点缀以腌制菌菇和芥末籽,并浇上浓鲜鱼汤汁。
